The Appalachian Trail follows the Crawford Path http://hikenh.netfirms.com/TDCrawfo.htm and Gulfside Trail http://hikenh.netfirms.com/TDGulfsi.htm which are mostly above treeline and offer outstanding views in clear weather. In late spring, safe water can be obtained (free)at the AMC Mizpah Spring, Lakes of the Clouds, and Madison Spring Huts. Trailside springs provide untreated water every few miles.

Note that before Memorial Day you can expect frequent snow above treeline which is also water :-) Even in June there are some snow patches, it is not what most people would consider a spring hike.
