It's not that difficult, once you begin.

An abbreviated version:
1) Wash rice.
2) Cook rice.
3) Put filling in a bowl with a spoon for scooping.
4) Put a bowl of salt water near your hands for dipping. Wet hands prevent the rice from adhering.
5) When rice is cool enough to handle, form it into balls (or pyramids, etc.).
6) Poke your finger into balls. Insert filling into hole. Close ball.
7) When done, refrigerate with plastic wrap for storage.

That's simple enough when producing a small amount for your family.

A JAC onigiri fest is another story, involving the purchase and transportation of a large amount of ingredients, setting up a table, selling for 5 hours during a showing, etc.
