I think your vacation/sick days are very good. Not a lot of employers offer sick days and most only give a weeks paid vacation. That said, I seriously disagree with not paying your nanny on the books with taxes, by doing that you are cheating her out of her social security when she gets older. I currently live in the NYC area and I moved there from Florida so I can relate to your two geographical pay scales, I think you pay a fair amount per hour for the Jacksonville area, with the vacation and sick days plus room and board it seems a proper pay for a nanny in that area (like I said you are offering more in the vacation/sick days that a lot of others do in my experience).
Please consider putting your nanny on the books when you move, it's her future you are paying taxes for and it's really not hard to figure the taxes.
