I would say it depends on what your contract states. If pet care is included in your list of responsibilites, and you signed that contract, then you should not have an issue with it. If it is not listed in your contract, then it is as simple as this: extra responsibilities = extra compensation. Perhaps if they do not feel that they can pay you extra, then they should offer you some other compensation in exchange for your care of THEIR pet. Something like plane tickets if they have frequent flyer miles, sports tickets if you are a fan, an extra paid vacation day each quarter, or something else that works for you. I had an employer do the same thing to me once. I politely told them that if I was not going to be compensated for the extra care then they would need to hire a pet sitter because I was not going to take care of the pup. They decided in the end it was cheaper to offer me some extra time off (got off 2 hours early on Fridays from that point on) than it was to hire a pet sitter. So there are some options for you to consider and propose to them before you quit.
