Silk, sometimes we're so much alike it scares me. As soon as I saw this thread title, the first movie that came to mind was Highlander 2. Why take the a concept that a spawned a huge cult following after the first movie and completely contradict it in every possible way in the sequel? Arghhhh. Atleast a half-way decent t.v. show was able to take advantage of the success of the original film.

As for your other choices:

I think the quality of the Lethal Weapon films did decline after the second one. I think it's odd how the Lethal Weapon franchise started out in the Action genre and ended up in the Comedy genre.

Believe it or not, I've never seen a Godfather film all the way through, so I can't comment.

To be honest, I hated all 4 Batman movies. To me, it's odd when I hear people say that the movies got worse as they went on, because I felt that they were all equally bad. Despite an attempt at being "dark" movies, they still reminded me of the old television show. Everything shot at an angle, the villians dancing around and laughing. Speaking about villians, not of the films' villians ever did anything "bad" enough to make the audience want to see them die at the end. I felt like none of the directors bothered to read the comic book. Jack Nicholson's Joker was nothing like the comic book villian. Another thing... The Penguin was not an ACTUAL penguin. He didn't have flippers for hands and he wasn't raised by penguins! Mr. Freeze was a decrepid old man who weighed about 100 pounds. He wasn't a body-builder!

Return of the Jedi was probably the worst of the first 3 Star Wars films, but I still thought it was very good. It's predecesors were just phenominal. I can't rip on Return of the Jedi. I enjoyed it.
