I would try putting him in a down for his guards because he knows due to schutzhund that he does a bark and hold in a sit. When he is in a downm he is to be quiet so that he understands that there is no barking in a down.

Second as for his defense of handler. I would due a lot o aproaches to the decoy and have him sit and be quiet during the hello. Then once you have finished that he can start to continue the exercise. I would NOT give him a bite if he is barking.I would also give corrections for the bark but in a manner to have him look up at you instead of the decoy during the aproach in the defense. Correcting WILL NOT break his drive if it is done properly and without fighting the dog.
