Sensational Spinach Lasagna (12 servings)

FOR THE FILLING:
(1) 10 ounce package chopped spinach, thawed and drained
1 (20.6 gram) package Mori-Nu Tofu Hero Italian Herb Medley
(2 ) 12.3 ounce package Mori-Nu Lite Silken Tofu, drained
2 cloves garlic, minced
1/4 cup Soymage Parmesan cheese alternative
2 tablespoons mellow white miso
2 1/2 tablespoons dry vermouth
1/3 cup nutritional yeast
1 teaspoon dried thyme
1 teaspoon dried basil
1 1/2 teaspoon olive oil
1 tablespoon minced dried garlic
1/4 teaspoon crushed red pepper
1 (12 ounce package) ground beef alternative
2 (26 ounce) jars Fat Free tomato sauce
(1) 16 ounce pkg. No-Boil lasagna noodles
Preheat oven to 350°. Place tofu in a large bowl and mash with a potato masher. Add garlic, spinach, Tofu Hero, and Parmesan. In a small bowl, blend miso with vermouth and add to tofu mixture with the yeast, thyme, and basil. Mix thoroughly and set aside. Warm oil, dried garlic and crushed pepper in a 10 inch frying pan over medium high heat 1 minute. Add meatless ground round and reduce heat to medium low, stirring frequently. Simmer 10 minutes, add 1 cup of the tomato sauce. Cover and set aside.
To ASSEMBLE:
Spread 1 cup of tomato sauce evenly along the bottom of a 9 by 13 baking
pan. Top with a layer of noodles. Cover with spinach/tofu filling, top with
a layer of noodles, and then sauce. Top with meatless ground round and a layer of noodles. Cover noodles with remaining sauce and sprinkle with soy Parmesan
cheese. Cover casserole with foil. Bake for 30 minutes. Remove foil and bake
an additional 15 minutes. Let lasagna sit 10 minutes before serving.

Notes on Ingredients
Mori-Nu Lite Silken Tofu-Very low fat tofu with a rich tasting, creamy texture and a custard like consistency. Widely available in aseptic packages in supermarkets and health food stores as from Morinaga Nutritional Foods, Inc.
But this can be of any brand in your country.
