Subject: Brisket Results

>Well boys it was a beautiful day sat. and got to cook'in early.Lit up the offset about 9:30 and put the brisket on at about 10:30 with a mixture of Royal Oak briquets and The harwood lump I got at Earl's recomendation.Threw on some green applewood and mesquite for smoke.Cracked my first beer,(mistake)don't know why I was so thirsty cause I had plenty of liquids the night before.Anyway, cooked along between 200 and 220 most of the day adding more lump every couple of hrs. while continuing to add more liquids to me.Got stuck at 140º for awhile but after a spell the temp climbed to 160.Now here's where things get fuzzy.Decided to sit on the couch for a spell,next thing I know I woke up and it was 11 pm.Ran outside all fire was out and everything was cold.But I did'nt panic,went back inside had a beer(still thirsty)and decided I would wrap it in foil.Put it in the oven at 250º for an hour,wrapped it in a towel and put it in a cooler for rest of the nite.Next morn'in at about 7 it was still warm,sliced some off but I felt it was'nt quite tender enough,wrapped it in foil again and put it back in the oven at 250º for 2 more hrs.I know you guys are probably think'in this guy is gonna kill half the neighborhood but there was no way I was'nt gonna eat this hunk'o meat.Well sir after I took it out the second time you could almost cut it with a fork and was real moist,easily one of the best things I've ever Q'ed.Mixed half with a little sauce and the rest for cheese steak style sammiches.It was awesome.Now I just hope I can do everything the same way next time.Good Q'n,Bigj.
