AHH---the plot is thickening. I checked out the grading website. Not quite what I was told today...I will check again tomorrow and report back. My guy at Better Beef didn't mention Canadian "prime" grade.
I did go to the CAB site http://www.certifiedangusbeef.com/cab/product/grades.html. The information there is based on the US grading system but the site adds another piece to the puzzle.
