Subject: Thanks Linda, I informed myself about the nitrate and found out that it is a salt indeed, but not one that they add.*lol* It is in the meat because the animals eat the grass of overly manured fields. So that special bacon must be from animals that have been fed with nitrate free food. That is cool. I havenīt seen it here so far, because we live in the country and the manure on the fields is a huge problem. There simply is no land you could grow anything nitrate free on. Only our water is free of it, because the european water law is the worlds most strict one. They have to filter it out. Because of those strong controls our tab water is healthier than any bottled water we could buy.

I"m no expert but I don't think taking the nitrates out removes the salt, I think although nitrates contain a type of salt they are also some kind of preserative that is supposed to be very bad for you. I read somewhere that in European countries it's not even allowed in the food?? Can you check your bacon and see? LOL We have it in Hot Dogs and Bacon here, and as it figures those are two of my son's fav foods. :( I have no idea what the nitrate free bacon taste like as I've never tried it, but one day I will run it by Jason and he can give it his seal of approval, or not. :)" on 18:52:47 07/29/03 Tue

I remember reading articles on it years ago and think of it now and then when I get concerned that Jason (my little boy) might be eating too much of it.
