crock pot bbq meatloaf

BBQ MEATLOAF

2-2.5 pounds ground chuck (i just used cheap hamburger lol)
1 can tomato soup, divided

1 egg, slightly beaten

1 cup crushed Ritz crackers

2 tablespns honey

1 tablespn plus 2 teaspoons Worcestershire sauce, divided

2 tablespns dried minced onions

1/2 teaspoon salt

1/4 teaspoon pepper

1/2 cup water

2 teaspoons prepared mustard

2 tablesppons brown sugar

Combine ground chuck with half of the tomato soup, egg, crackers, honey, 2 teaspoons Worcestershire sauce, onion, salt, and pepper. Mix well and form into a ball. Place a crinkled length of aluminum foil in the crockpot so the ends extend an inch or so out of the pot. Place the meatloaf in the pot (the foil makes it easier to lift the meatloaf out and keep it out of the drippings).

Combine remaining soup, 1 tablespoon Worcestershire sauce, the water, mustard, and brown sugar. Whisk together and pour over the meat loaf. Cover and cook on low for 8-10 hours.

Serves 4-6.


roast in the crock pot with carrots, potatoes and onions

I dont use a recipe for this one.. but I put a roast in the crock pot (i always throw it in frozen but you could thaw it)and throw in some chopped up potatoes.. not chopped too small or they will turn to mush.. add some peeled, carrots cut into maybe 2 or 3 chunks per carrot..and an onion or two.. peeled then cut in half.. then I put in just a tad bit of water.. maybe 1/4 cup..and usually a pack of lipton onion soup mix... and cover and cook on low all day. The meat comes out sooooo tender and the juice can be used as a gravy or made into a gravy..

Another one I do is to throw in the roast, potatoes, carrots, onions and then add a can of cream of mushroom soup to it... then it will make a gravy from the soup..


roast in the crock pot with fajita seasoning

for this one, I just throw the roast in the crock pot and I bought one of those packets of fajita seasoning/marinade.. I put the seasoning on the meat, and some water on it.. not too much because it makes its own juice.. cook on low, covered all day till tender.. then I shred it up and put it in flour tortillas with cheddar cheese, salsa, tomatoes, olives etc..


egg rolls

again, I dont use a recipe.. and theyre not totally like real egg rolls but heres what I do..

I make a mixture with shredded cabbage, shredded carrots, chopped green onions, sometimes I add water chestnuts but not all the time, chopped bean sprouts, and some fried ground beef or pork.

when Im cooking the meat, I add to it some soy sauce, and some garlic salt.. and salt and pepper.

I put everything into a large bowl and mix it up and add a little bit of sesame oil.. I taste to see if it needs more soy sauce or anything and add if needed..

Also, I have cheated and bought the bags of cole slaw mix.. cabbage, carrots, etc already shredded.. saves me from buying the cabbage and stuff seperatelyand having to shred it all up..

ok so I mix it all up then I wrap it into the egg roll wrappers.. I buy those already made.. in the refrigerated section.. and they have directions in them on how to roll..

then I deep fry them and serve with some soy sauce and sweet and sour sauce.
the kids love them!!

also, I love cream cheese wontons.. so I came up with my own version and I buy the wonton wrappers and put a little bit of cream cheese inside with some salt and wrap and fry.. yummmmmy kids love those too..
