in Maine we had a new years morning breakfast at church and a woman made some kind of sauce and it was to be poured over toast... I asked her about it and she said it was a basic white sauce with some cheese in it and it also had the hard boiled eggs, but sliced not chopped.. sooooo yummy but im not sure what kind of cheese she used.. she also had the sauce in a crock pot to keep it warm..

now, Im making the same thing I made last year.. but for lunch since I barely have time to get me and all the kids out the door for church in the mornings LOL

I take english muffins, toast them, butter them..

put a slice of fried ham on it, a slice of cheese, and some sliced easter eggs.. then cover with hollandaise sauce (i cheat and use the packet that you mix up with water or whatever).. MmMmMm
