Frankly I thought Bones' dancing was out of character

Definitely out of character. That is the basis of the "Well where did that come from?" comment. I enjoy her "I don't know what that means" response to pop culture references, not just because she isn't aware of the references but also because she then exhibits absolutely no interest in familiarizing herself with the reference. She never says “I don’t know what that means – please explain” she just notes that she is unaware and goes about her business. It is like she is such a geek (or nerd?) and is perfectly happy with the situation.
