Tori isn't bisexual.
This movie isn't about sex or gender. It's about transcending sex.
Tori slept with Jake because she felt like she had to do that to justify and somehow prove that she is "not like that." She did this for a show to all the other students, from being seen with him to bragging about how good he was in bed on the soccer field.
Tori is really in love with Paulie. BUT Tori also has this nagging to be like everyone else, to fit in and blend. And to do that, she needed a boyfriend, especially after everyone found out about Paulie and Tori's relationship.
Tori isn't out to hurt Paulie. Hurting Paulie hurts her, because she loves her. Tori isn't strong enough to give into her love for Paulie, so she leaves her love for the acceptance and security of society.
Paulie can't help but be who she is no matter what. Tori is the complete opposite. Just like Paulie can't help being extreme, Tori can't help wanting to be like everyone else.
