Any way, coming to your questions:

If your sample has gravels - take that part out and then recalculate the rest of the sample as 100% to use the Textural Triangle.

If your sample does not have clay, only use the silt and sand class sizes to determine the textural classification from the Textural Triangle.

For Q 1: You need to report on the percentages of respective class sizes, and therefore, how you would classify them - fine grained or coarse grained etc. Remember, the three questions actually gradually take you to a full understanding of the soil-water environment and how a plant responds to that - step by step.
