I have another of my mother's recipes. Except it's not really a recipe. There are at least 3 types mostly for high school students for lunch - but my mother used to make them for my dad who worked at the Brooklyn Navy Yard during World War II. Peppers and eggs, asparagus and eggs, eggplant and eggs.

Boil the peppers (bell), aspargus or eggplant (sliced thin) until soft
Slice (and peel if desired) the peppers and chop up the asparagus
Place garlic slices and olive oil in a frying pan
Heat the olive oil and brown the garlic
Add the peppers or asparagus or the sliced eggplant and heat for a little while
Add enough eggs and mix the ingredients until eggs are cooked - season if desired.
Add the cooked ingredients between two slices of bread - for lunch --- ummmm good!!!
