Subject: New Fish

I just got a fish tank with a filter and light, water conditioner, gravel, a plastic plant and a plastic fish toy. I'm getting ready to set it all up and run the water so that I can get a fish or two. I was wondering what the easiet fish to care for is for first timers and if I need a heater for things like small goldfish or a beta fish. When changing water is it OK if the waters are not at the exact same temperature, but close enough? Any advice would be appreciated, thanks.
