Hey, Simone,
What I understood from Wh- clefts is that there are actually two types: informational, which refer to the central topic of the conversation, and interactional, which respond to a problem. When you begin to conclude a conversation, like in "What I'm trying to say is that you should believe in yourself", you're using a wh- cleft to summarize or restate your previous ideas. On the other hand, if someone asks you 'Can I borrow your pencil?' and you answer'What pencil?', you won't be able to convey your message properly, because it seems that you have no pencils at all - if you use 'which', you'll be "responding to your problem". Better?
