I think the 'Team Balance' sheets one of the mandatory sheets. Regarding on a few coaches using it, that is not really an issue aside is (rightly in my opinion) locked for most of the year.

It serves so many purposes.
1) it's easy to to look for trade targets
2) easy to see what each clubs strengths and weaknesses are (including your own), essential for realistic trade offers.
3) easy to check if a player is in or out of the correct position on game day.
4) It looks pretty
