You shouldn't need spurs on this one, just give him a good boot and a smack to get started. Teach him to start with a bang, possibly a rear, and than gallop off. Eventually, you'll need several horses:

A deristier (don't hold me on the spelling, on any of these): A showy, expensive jousting mount used only at the tourneys. Beautiful, well-trained, showy mount, trained to joust and that's about it... (A friesian, andalusian, similar horse)

A roundsey: a slightly lower-grade horse than the deristier, suitable for actual battles. Trained to fight and to run over anyone in their path (no mean feat), Roundseys are the mounts ridden to battle... (a draft-cross-type horse)

A hackney: A fine riding mount for showy parades and sometimes hunts. Fine boned, with a light, prancing gait. (Arabian type horse)

A hunter: Used for (duh) hunting. These horses are athletic, fast, and have stamina for long runs. They must be able to jump, run, stop, etc. (similar to a modern foxhunter or event horse, though less strenuous than eventing)

A courser: A horse used for traveling and messangers, a courser is a swift, light-boned horse used to run long distances at a fast pace. (Thoroughbred-type horse)
