The 5xx series machines were targeted at the education/budget market. LC stands for Low Cost, after all. As such they were not built with the high-end parts. The 575 came out just at the dawn of the PPCs, and the primo video systems were going into the high end Nubus machines like the Q840 and the PM7100/8100.

That said, the coolest video card you could buy in 1994-95 probably only had 16M of VRAM. At the time, the only people using that huge of a card were graphic designers who needed more than the 640x480 pixels the 5xx machines offered.

Mac gaming didn't really blossom til the advent of the PCI Mac a few years later. The games a 575 was designed to play are more along the lines of "Math Munchers" and "Bailey's Book House" (education titles) with 256 colors at 640x480 or less.

I can attest to the fact that it will still play the lions' share of elementary education titles. My kindergarteners love to hop on their 575s and 580s and match colors and shapes.

If you want a great game that'll run on your 640x480 Mystic go find a copy of "The Logical Journey of the Zoombinis." Fantastically realized logic puzzles and fun cartoony adventure.

As to video cards, I was just at a site recently that sells Lapis brand LC PDS video cards (what's the site folks? I forget). They won't be too much better than your internal video RAM wise, but you could drive an external monitor with it and double your useful real estate.
