You do need to have the ethernet card plugged into a ethernet network in order to select "ethernet" in Appletalk in control panel. You might be able to fool Appletalk by plugging in a loop back plug in the back of the ethernet card. Anybody know?

Is your CD ROM a Apple brand or another? If another, you may need a driver (like what is supplied with FWB's CD ROM Toolkit).
