Yep, that'll work. Get 50-conductor cable and about three feet of it and you should have enough to do the SCSI too. Makes more sense to just order the whole length you need at once, since getting a foot of the 40-conductor and two feet of the 50-conductor would only save you about 30 cents or so.

Beyond about 8 feet, it's cheaper just to go ahead and get 10 feet, which should be enough for five PowerCCs if you just use it for SCSI (50-conductor), or 3-4 if you use it for SCSI and other wiring.

I haven't yet built one, but from what I've read and from dialogue with Stuart, I believe a single PowerCC will require about 10 inches (25 cm) of 40-conductor cable and 24 inches (60 cm) of 50-conductor cable (for the SCSI rerouting, if you intend to use the SCSI at all). Stuart and John Stocker can probably confirm the accuracy of this estimate.
