I think they refer more to the pace of the game than anything else.

Like CS is fairly slow paced and realistic without too much jumping, while Quake is extremely fast with many jumps and flying through the air, and pretty unrealistic.

I don't believe you will see much of CS in DF as such, it is very different genres.
