Lillith was a way to explain the two creation accounts.

The biblical stories did not develop in a vacuum. In this, there were other stories that existed when they were told. These other stories were preserved in a small way through some of the commentary on the biblical stories. I think Lillith, being the first wife of Adam, giving birth to demons, refusing to be subservant to Adam.
