You've probably already thought of it and/or done it, but for what it's worth... It might help to set some mutually acceptable meeting dates/times -- maybe just two ahead -- along with setting deadlines for getting done one or two target steps in the project. Progress can be measured against those target dates rather than getting concerned with inevitable periods of inactivity due to other responsibilities.
