Subject: Painting Technique of "Bar at the Folies-Bergere"

As was mentioned in class, "Bar at the Folies-Bergere" is painted in such a way that it looks like the bar is floating in mid-air because of the mirror effect on the back wall in the painting. Now I've read somewhere that some artists used/use a layering technique when there is a busy as well as intricate background. This technique is when the artist paints the background of the painting to span the entire canvas, and when this has dried paint the foreground over the background. Could this be the case with "Bar at the Folies-Bergere"? It would make sense, but then again, would a professional be so careless as to forget to paint something? I don't know, but if anyone has any information on such, I would be most grateful for it.
