Chicken with Mixed Greens

2 Chicken breasts (aprox 300g)
1 tsp Ginger
2 cloves garlic
2 tbsp soy sauce
2 leeks: finely sliced
250g baby English spinach
1-2 bundles baby bok choy: cut in bits
1 cup frozen peas
1tsp sugar
3-5 tbsp chicken stock
Dash of chilli sauce (as you like it!)

Season chicken strips in salt and pepper.
Spray wok with canola spray oil and add ginger, garlic and soy sauce. Stir fry for 30 seconds and then add chicken.
Stir fry chicken until cooked (3-5 minutes) then remove meat from the wok.
Bring wok up to temp again and add leeks. Stir fry on high for 3 mins or until leek has softened.
Add spinach, frozen peas and bok choy to wok and stirfry for 1 minute.
Cover wok and steam veg for 2 minutes (or until greens are wilted)
Add sugar, chilli sauce and stock together, then pour into the wok.
Add the chicken and heat through for 2 minutes
Serve with a cup of rice and enjoy!!!
This is great because the only ingredient in the meal that has a points value is the meat, and it works well with other meats as well.
With this quantity of chicken it is 8 points in total and I made this amaount for 2 people (huge mountainous stack of food)
With 1 cup of cooked rice it rocks in at 6.5 points each and is really filling and delicious
