CURRIED TUND BAKE

1 onion chopped
11/2tsp curry powder
11/2tbsp.cornflour .75
375 can carnation light evaporated mild 4.5
2 tbsp light mayonnaise 2
425g can tuna, drained and flaked 4.5
340g can asparagus cuts drained
salt ( optional )
3 slices bread crumbed 3
1 tbsp chopped parsley
1 tblsp. low fat margarine melted 1

1. Heat oil in pan, add onion, cook 1 minute, add curry powder, cook further 1 minute.
2. Add combined cornflour and evaporated milk, bring to boil stirring, simmer 1 minute.
3. Remove from heat, stir in mayonnaise, tuna, asparagus and salt.
4. Spoon tuna mixture into oven proof dish, top with combined remaining ingredients. Place in 200C oven 10-15 minutes until golden.

Serves 4 @ 4 points per serve

Can use corn, broccoli, peas or sliced hard boiled eggs as well - Don't forget to add the extra points though.
