CHICKEN MEATBALLS WITH PEACH & VEGGIE SAUCE

320g minced chicken (10.6)
1 spring onion, finely chopped
Grated rind one orange
1 tsp curry powder
4 tsp plain flour (.5)
1˝ cups chicken stock
2 cups sliced zucchini
1 cup sliced red capsicum
2 peaches, stoned & Sliced (1)


1) Place the chicken mince, spring onion, orange rind and curry powder in a bowl and mix well. Roll into balls, using about a tablespoonful for each.
2) Spray pan with cooking spray and add the chicken balls, tossing over a moderate heat until they are nicely browned.
3) Add the flour to the pan, stirring until it is absorbed. Then add the stock, zucchini, capsicum and peaches. Bring to the boil, stirring constantly.
4) Reduce heat and simmer gently for approximately 12 to 15 minutes until the chicken is cooked.

Serve with rice or noodles……… (but don’t forget to add the extra points on)

Total recipe = 12.1 points

Serves 4 @ 3 points……..


PS -- If you want more meatballs, adjust recipe to 400g of mince, (13.5) and can use 1 cup of canned peaches making the recipe total 16.0…… so serves 4 @ 4 points.


VARIATION………. Use apricots, or nectarines… or maybe even pears
