WHITE CHRISTMAS Serves 24 at 1.5 points eeach
2 cups rice bubbles
1/2 cup dessicated coconut
1 cup powdered skim milk powder
1 cup mixed dried fruit
1 x 100g pkt glace cherries, chopped
100g white chocolate, melted
1 x 200g tub NESTLE Diet Swiss Vanilla Yoghurt

Line a 20cm x 30cm lamington tray with foil. Combine the rice
bubbles, coconut, milk powder, dried fruit and cherries. Mix
well. Stir in the melted choc and yoghurt. Mix until well
combined. Press into the base of the prepared tin. Freeze until
set. Cut into fingers.

WHITE CHRISTMAS CRACKLES
60g rice bubbles
180g mixed dried fruit
50g multicoloured glace cherries, chopped
120g white choc melts

Place 18 patty cases in patty tins. Combine rice bubbles, dried
fruit and cherries. Melt choc and stir into dry ingredients.
Spoon mixture into cases and store in fridge.

YULE LOG SERVES 12 @ 2 POINTS per slice
60g plain flour
2 tbs. cocoa powder
3 eggs
2 tbs caster sugar
1 tbs Honey
½ cup thickened cream
¼ cup Weight Watchers Strawberry Jam

Pre heat oven 180°C. Line a Swiss roll tin with baking paper. Sift together flour & cocoa several times. In a bowl beat eggs with sugar and honey until very thick & creamy. Fold in flour mixture. Pour into prepared tin and bake for 15 20 mins or until spongy to touch. Invert onto a clean tea towel, peel off paper & roll up. Cool. Whip cream. Unroll swiss roll, spread with jam & cream. Re roll & sprinkle with icing sugar.
