If you want more experienced advice then don't bother reading any further. I just figured I'd tell you how I see 'evil' characters from a third person point of view.
Really, I think it all depends on how creative you want to be, or how realistic you want your roleplay. Afterall, everyone knows real horses aren't evil. If you wanted to keep a realistic side to it, try to imagine the worst horse you've ever seen or heard about in real life and copy it's attitude, at least to a point that fits your needs. For example, instead of acting 'evil', one could act obnoxious, or mischievous, or annoying or skittish.
Sometimes it's more fun for everyone if the interaction is creative, even if a bit unrealistic. If you want, you have great vocabulary (at least to me), so try to add in little details, or adjectives, that will give someone the idea of your character's 'evil' disposition. A glint in the eye, a meaningful stomp, a malicious toss of the head, et cetera.
I don't play 'evils' well myself. Sorry if this was a waste of your time!
