I cooked 15 lbs of corned beef in the oven . One of my daughters and her husband were here. Made enough so we could freeze some for each family for sandwhiches and also two big pieces to make corned beef hash for breakfast when the whole gang is together in the summer. I made soda bread one year however we like the dinner better with bread sticks. I put onions , carrots, cabbage and potatoes with the juice from the oven baked corned beef and cook the vegies on top of the stove. I think the corned beef shrinks less baking it covered in the oven with about 1/4 inch of water in the roasting pan . and then one does not have to do anything with the corned beef while its cooking got the recipe from the seattle times newspaper about 17 years ago .
