I think Bilbo was in such a hurry to leave simply because it was his time to go. The town people would start to think something was up when you look like your in you prime when your over 100 years old! He also didn't want to get corrupted by the power of the ring.

I also believe he didn't give the ring to Gandalf simply because he would use it for all the wrong reasons.
