The One Ring is an instrument of great power that kind of casts a spell over it's bearer. This is what kept Bilbo lookin' so young in his old age. It's also why he didn't want to hand over the ring for Gandalf to give to Frodo. The wearer becomes kind of addicted to it's power. Bilbo was most likely afraid that Gandalf would steal it, because Bilbo was still addicted to it and really didn't want to give it up. I hope this helps. Peace out!
