Ingredients
1 lb dry pinto beans
6 slices of thick sliced bacon, cooked and chopped
4 tablespoons bean seasoning
1/2 cup cilantro, chopped
1 (14 ounce) can diced tomato or fresh diced tomato
1 (12 ounce) can beer (important ingredient)
Directions
1 Cook bacon, drain on paper towels and chop when cooled. (Bounty is the best brand of towels and I usually saute some onion in the bacon grease and put everything into the pot of beans. I mean the ingredients, not everything in your house.)
2 Cook beans according to instructions on package or your mother-in-law's wishes.
3 After 1 and 1/2 hours of cooking beans, add bacon, bean seasonings, cilantro, tomatoes and beer. Ballantine or Rheingold is the best but Schafer is acceptable. Root beer is not beer.
4 Add two quarts of milk.
5 Cover and continue to cook for an additional 40 minutes or until the beans look tender.
5 Serve immediately or stick it in the refrigerator to cool if overnight. Make sure the refrigerator is plugged in, otherwise you may end up sticking it yourself.
6 You can add fresh jalapeno at the same time you add the tomatoes for an extra kick! If you have any jumping beans, feel free to add those.
7 You must use Texas Spice Company Bean Seasoning. However it is sold only at all H*E*B Grocery Stores. If necessarily, purchase a plane ticket to buy this important ingredient.
8 Stick a fork in it, it's done!
