There is a fudamental problem with your premise. Any plant material near the public roadways will absorb an intolerable amount of pollutants into their systems. While the plant can adapt and even thrive, any fruit would have well over your daily recommended allowance of heavy metals and petrochemical byproducts. The option is worse in countries that still utilize leaded gasoline.
