Cut where it will bleed the most but will make the creature suffer. Pain is the key. Dont act like a know-it-all Western. You are a Shadow, use your powers! + slices with his talon at the dead gryphon's neck, stomach, and legs + eyes look into hers + That is where you shall slice first. Then you can kill it, but let it suffer... It is pure instinct...
