Subject: Fighting The Battle

OK,
I haven't got back into animal products - except for one unfortunate bout w/ Jalapeno Poppers - which of course, has cheese.

But everything else - especially where white flour is concerned - really got out of control!!!

For the past two weeks, I have been eating potato chips, scones, doughnuts, etc. One evening, I sat down to a LOAF of bakery bread (Italian), Olive Oil, and a bottle of Chardonnay.

So, now instead of just giving up, I resisted where I could, and finally have taken the following actions:

The first part was realizing that I have been eating the same thing for the past 3 months - Trader Joes frozen vegan lunch entrees, pasta, rice, Garbanzo Beans.
And now I'm going deprivation crazy and eating everything in sight! Fortunately, I just received my first Vegetarian Times issue.

So, I splurged, and bought a lot of groceries.

My actions now:

Change my dinner and lunch cuisines radically every week. (One recipe usually makes enough to last me 3-4 days)

Buy up more berries and bananas - and add Maple Syrup to cereal. To avoid the NEED to delve into doughnuts and cinnamon twists.

Bought some potatoes as well. Hoping 3-4 baked potatoes per week will sate my chip appetite.

So the fight goes on....

This week's cuisine is

Vegan Eggplant Ratatouille. Have w/ either rice or pasta. Or - hollow out a baked potato, Stick the rat.. in both halves, then add olive oil and seasonings to the cooked potato guts. Makes a pretty good meal.

Tofu fried in olive oil w/ garlic and onions over rice or potatoes.

Rather than salad, In addition to a lunch entree based on the above, I am escalating to an onion, avocado, tomato, and mustard sandwich on organic whole wheat.

Wish me luck!
