We have a lot in common ... I too have an overwhelming sweet/starch tooth. When I became vegan, I did gain weight because I went buckwild with the breads. Here's what helps me in this seemingly life long battle:

Make sure to eat AT LEAST 5 servings of fruits and veggies each day. (When I add them to my diet it's a gently reminder to eat less of the starches... plus the fruit curbs the sweet tooth.)

Limit yourself to breads you don't like too much. This means I can't buy fresh baked baguettes. :-) But I can eat all the "Ezekial" bread I want ... but who'd want to eat more than 2 slices a day of it? LOL

Have brown rice instead of pasta. If I have brown rice and really dark brown bread, I don't go so nuts over pasta (white flour) and white breads.

Have more stuff that's filling: beans, vegetarian chili, mushroom soup (if you "marinate" shitake mushrooms overnight in about a cup of soy sauce (or liquid aminos to limit the salt), a teaspoon of olive oil, a squirt or two of fresh lemon juice, and about a cup of water ... it will have an almost meat-like, absolutely delicious consistancy. Drain and put in a blender with half an avacodo and a cup of water [heated as for tea]. Turn the blender on and immediately off ... that's a thick, filling soup.) ... lemme know if any of this sounds good :-)
