First, it's great you have your grandfather's watch. I hope you keep it to pass on to your own kids as a family heirloom.
Second, yes, there is a quality difference between a BW Raymond grade and a GM Wheeler: the Raymond was made to exacting standards required for railroad service, while a Wheeler was designed to be a good quality jeweled gentleman's watch - better than most in its day, but not up to railroad standards, and hence not as expensive either.
As for what to collect, well, collect what you like. There's not a single "right" way to collect, but there is definitely a wrong way, and that's to spend your cash on something you don't really know what you're getting. A good basic reference book is Shugart's "Complete Guide to Watches," available at most bookstores or in many local libraries. Visit http://elginwatches.org/index.html and learn a lot about Elgins, and the old watchmaking industry in general. And also visit the National Association of Watch and Clock Collectors, at http://www.nawcc.org . They have a wealth of information, and an extensive lending library free to members. Good luck!
