 It depends on the kind/model of watch. Most are pendant-set (pull up on the winding knob, and then move the hands). Some are lever set (pull out a small lever along the side of the watch, just to the right of the pendant, and then turn the winding knob to move the hands). Some old watches are keyset (a small key fits over the center of the hands).
