Watches and cases were made by different companies, and sold separatly. Some case designs could get quite elaborate. The Philadelphia Watch Case Co. marketed both cases and complete watches, as seen in these ads - http://scriptorium.lib.duke.edu/dynaweb/eaa/databases/ephemera/@Generic__BookTextView/39108;nh=1?DwebQuery=Philadelphia+Watch+#X Basically, as a customer, you would go to the jeweler's, pick out a case and watch that you liked, and the jeweler would put the two together for you (sort of like picking out what color and other options you want your car when you go to the dealer).
As you noted, according to the serial number from the movement, it was made c. 1901 (very nice movement, by the way!). There are no surviving records for serial numbers of the old watch case companies, however, so no help there. At the time of its purchase, this would have been a top flight (and very expensive) watch, generally purchased by someone of means, or a railroad worker who both needed and wanted a watch of high quality.
