: back to the counter, she sets the cheeses aside then she takes a large bowl and adds some of the sa~tarna flour and the two salts she also adds an 1 egg as well taking a spoon she mixes every thing together then she sprinkles some of the flour on the counter and places the dough on the flour and gently kneads the dough then divides it in to 30

: small little balls and places then on the counter to rest while she works on the other things. taking the onions she cleans off the outer skin and washes it . taking a cuttin stone, she chops the onion, placing it in a small bowl. she looks for something to grade the cheeses, but does not find any thing . taking the cuttin stone she cuts the cheeses very small placing them in a bowl. taking a deep breath she turns

: again for some thing to roll them out her eyes catch a goblet that is plain standing on tip toe she reaches for it and just barley able to move it to the edge of the shelf then pushes it off into her right hand. she rolls out each of the small balls making them very flat and round places them on a platter she takes them to the fire pit with a skillet, she finds a place over the pit that she can set the

: skillet and placing a little lard in the skillet she get it very hot then adds two of the round flat dough and watching it closely she makes sure it does not burn but lightly browns on each side, she does this to all of the dough balls and places them back on the platter, takes the

: skillet from the pit she moves back to the counter, there she takes some of the bosk meat and shreds it and places a lot in each of the flat bread with some spices and peppers as well. she rolls them up and placing them in a large skillet and sprinks some cheeses over them she feels something is missing

: flat bread and bosk roast meat. while the cassero cooks she cleans up her mess, washing and drying the dishes she puts them away and scrubs the counter. she checks and finds the casserole is done and sets it to the side to keep warm
