Subject: Lemon Pudding Cake

Lemon Pudding Cake

3 eggs, separated
3/4 cup granulated sugar
1/3 cup all purpose flour
1/4 teaspoon salt
1/4 cup lemon juice
1 tablespoon grated lemon zest (optional)
2 tablespoons butter melted
1 teaspoon vanilla extract
1 cup whole or low fat
Whipped Cream for serving


Preheat oven to 350º

Butter a 1 1/2 casserole dish. In med bowl beat egg whites until stiff but not overly dry.
In a small bowl beat egg yolks until thick and pale yellow color.
In another bowl, combine the sugar, flour, and salt. Then add lemon juice, zest, butter and vanilla.

Beat egg yolks into the sugar flour mixture. Add milk and stir. Fold in egg whites. Pour mixture into casserole dish. Set casserole dish into a pan of water so the water will come to 1/2 up outside of the dish. Bake 45 min. Center should be slightly moist when tested with toothpick. Serve warm or cold with whipped cream.
