Subject: Kentucky Butter Cake

Kentucky Butter Cake from a 1979 Pillsbury booklet

3c Pillsbury's Best All Purpose or
Unbleached Flour
2c sugar
1t salt
1t baking powder
1/2t soda
1c buttermilk
1c margarine or butter, softened
1t vanilla or rum extract
4 eggs

Heat oven to 325-degrees. Generously grease (using 1T solid shortening) and lightly flour 12-cup fluted tube pan or 10-inch tube pan. Lightly spoon flour into measuring cup, level off. In large bowl, blend all cake ingredients at low speed until moistened. Beat 3 minutes at medium speed. Pour batter into prepared pan. Bake at 325-degrees for 55 to 70 minutes, or until toothpick inserted in center comes out clean.

Sauce:
3/4 c sugar
1/3 c butter
3 T water
1-2 t vanilla
Heat over low until melted and dissolved.

While cake is still in pan, poke 10-12 sets of holes with a long tined fork. Slowly pour sauce over cake. Let sit 10 minutes before inverting.
Invert to serving plate.
