Subject: Chicken and Dumplings Homemade Easy

Chicken & Dumplings
Boil a fat hen in seasoned water. Cool, remove meat from bones but reserve broth.
Strain broth and return to boiling.

Dumplings:

1 cup all purpose flour
1 cup bisquick
1/4 tsp. black pepper
2 eggs
1/3 cup milk

Mix all dumpling ingredients. Roll out onto floured surface. Roll *very* thin -- almost as thin as a potato chip.
Cut into 1 inch by 2 inch strips and lay out on floured surface for at least an hour. They are better if you leave them out to "dry" longer.

Drop the dumplings individually into the boiling broth and cook until tender but NOT mushy!! Just before they are done, add the deboned chicken to the mixture.

These are really good and can be frozen.
