Subject: Old Fashioned Chocolate Pie

Chocolate Pie
1 cup PLUS 6 tablespoons granulated sugar, divided
use 3 tablespoons cocoa
3 tablespoons all-purpose flour
Pinch salt
3 eggs, separated, divided
use 1 cup milk
2 tablespoons butter OR margarine
2 teaspoons vanilla extract, divided
1 baked pie crust
In a saucepan, place the 1 cup sugar, cocoa, flour and salt.

In a small bowl, beat egg yolks; add milk and stir to mix. Add milk and egg mixture to sugar mixture in saucepan. Stir in butter. Cook, stirring, over medium heat until mixture thickens and begins to bubble. Remove from heat and add 1 teaspoon of the vanilla.

To make a meringue: In a medium bowl, beat egg whites until stiff. Add the 6 tablespoons sugar one tablespoon at a time, beating well after each addition. Stir in remaining teaspoon vanilla.

Spoon filling into baked pie crust. Spread meringue over filling and bake at 375 degrees until brown, about 8 minutes.
