Subject: How to brine cucumbers for pickles.

This is just the brining method and you can go on and make any kind of pickle you want after the brining is done.

Day one: Put your pickles (whole) in a cooler that has a spout at the bottom, so that you can drain off the brine easily as the days go by. Make the brine.... using 1 cup pickling salt and 1 tablespoon alum to each 5 gallons of liquid. Use 50/50 of water and vinegar. Bring the brine to a boil and then pour over the cucumbers, close the lid and let stand for 24 hours.

Day two: Drain the liquid off the cucumbers and bring to a boil again, then pour over the cucumbers and close the lid, letting stand another 24 hours.

Day three: Repeat day two.

Day four: Drain off the old brine and discard... you can add this to the compost pile. Make a new brine, bring to a boil and pour over the cucumbers.

Day five: repeat day two

Day six: repeat day two

Day seven: Drain off the old brine and discard, the compost pile is the best spot for it. Make new brine and bring to a boil and pour over the cucumbers.

Day eight: repeat day two

Day nine: This is the day you have waited for. Drain the brine off, rinse, and you will find your cucumbers are brined and ready to pickle adding any spices you like. They will be VERY crispy!

Sterilize jars, fill with the cucumbers. Make a mixture of whatever type of pickles you want, bring to a boil and pour into the jars. Put on a lid, and a jar ring, water bath for 20 minutes after the water starts to boil.
