Subject: Baking Strawberry-banana bread

I have a great recipe for making Strawberry-Banana bread and I want to make it for my neighbors this year. I'm wondering, though, if I can bake it ahead of time, then freeze it? I'm concerned that the bananas might not freeze or thaw well. Any suggestions? Thanks.

Freezing baked bread goods can be tricky. You have to wrap the bread very tight in plastic wrap a couple of times, making sure no air can get to the bread. You have to leave the bread wrapped while it thaws completely. The main thing is keeping ice crystals inside the bread to thaw inside the bread.
